Flax "Cracker"

This quick and easy "cracker" requires seconds to make, microwaves to cook and has no salt, and no sugar. You can Jazz it up by adding seeds, spices, finely chopped nuts, raisins, honey or sugar to the mix before cooking. The options are endless.


    1 whole egg

    3 tbsp. ground flax seeds


Mix Flax with egg and stir until combined.

Spray a small plate with Pam or oil - enough to coat the top of the plate.

Pour the mixture onto the oiled plate and spread out as thin as you wish.

Microwave this on high for about 2 minutes or until the egg is no longer shiny and wet. I used to microwave for 3 minutes - this was fine, it just produced a drier, more cracker-like texture. 2 minutes gives me a softer, almost cake-like snack.

** Remove warm plate and snack from the microwave with care.

Use a fork or knife to "pop" the cracker free from the plate; it won't stick too much because of the oil.

Top with butter or any nut butter, honey, jam, cream cheese - whatever you desire.
