Fish Sticks

Quick and easy recipe for fish sticks. I used a tiny bit of honey and mustard to dip them in.


    1 c. breadcrumbs, made from sprouted whole-grain bread

    1 tsp. lemon pepper seasoning

    1/2 tsp. garlic powder

    1/2 tsp. paprika

    1/4 tsp. sea salt

    1/2 c. spelt flour

    2 egg white

    1/2 tsp. cayenne pepper

    1 lbs. haddock, fresh, wild-caught


Preheat oven to 450°F. Set a wire rack on a baking sheet; coat with coconut oil. Place breadcrumbs, lemon pepper, garlic powder, paprika, cayenne pepper, and salt in a shallow dish. Place flour in a second shallow dish and egg whites in a third shallow dish. Cut fish into 1/2 inch x 3 inch strips. Dredge each strip of fish in the flour, dip it in the egg, and then coat all sides with the breadcrumb mixture. Place on the prepared rack. Bake until the fish is cooked through and the breading is golden brown and crisp, about 10 minutes.
