Pretty easy and very good
3 med. carrot
3 celery stalk, fresh, organic
1 med. green bell pepper
2 garlic
1 med. onion
1 c. lentils
19 oz. stewed tomatoes, canned
48 fl oz. vegetable broth
1/2 tsp. sea salt
1/2 tsp. black pepper
1 tsp. ground cumin
1 bay leaf
1/2 tsp. dried oregano
1/4 tsp. cayenne pepper
2 tbsp. coconut oil
Heat oil over medium low. Add carrots, celery, green pepper and garlic. Cook, stirring often, for about 10 minutes, until soft. Reduce heat to low. Add lentils, tomatoes, vegetable broth, and seasonings. Cook at least 3 hours.
