This is my new favorite snack item!! It is very filling and very flavorful. It is also the perfect on the go item. One of the hardest things about packing my lunch all the time is trying to find a microwave to warm my meal. This item is perfect chilled.
1/4 onion
2 celery stalk, fresh, organic
1 oz. cooked chicken
1 tbsp. Greek yogurt
1 tsp. dijon mustard
1 tsp. apple cider vinegar
sea salt, pepper, and garlic to taste
This recipe makes 1 serving. I use the small cup included with the magic bullet. I put the ingredients in the following order (not sure if it really matters, but just in case): onions, celerly, salt/pepper/garlic powder, chicken, greek yogurt, apple cider vinegar, Dijon mustard. Then pulse to desired consistency. Many people like apple or grapes in their chicken salad, which you can add if desired. I eat my fruit as a side to this for a snack. Very flavorful! I make mine pretty garlicky. Personalize it to your liking :-)
