Kick plain old scrambled eggs up a notch!
2 tsp. coconut oil
1/4 c. onion
1/4 c. green bell pepper
2 egg
sea salt & black pepper to taste
1/4 c. fresh made salsa
Heat coconut oil in a skillet over medium heat.
Add diced onions and peppers to skillet and saute until tender.
Pour eggs over the mixture in the skillet. Season with salt and pepper.
Continue to cook over medium heat, stirring occasionally, until the eggs are completely set.
Serve topped with salsa.
