Feta and Spinach Chicken

Perfect for a cool fall day! Serve with a delicious tossed salad or some cooked veggies.


    1/2 lbs. chicken breast

    2 c. spinach

    1 clove garlic

    sea salt & black pepper to taste

    1 tsp. dried basil

    1 tsp. dried oregano

    1 tsp. dried parsley

    2 oz. feta cheese

    2 tsp. extra virgin olive oil


Preheat oven to 350ºF. Arrange chicken in a baking dish. Season with sea salt, pepper, basil, oregano, and parsley.

Heat olive oil in a pan over low heat. Add minced garlic and spinach. Cook, stirring occasionally, until spinach is wilted. Remove pan from heat, and stir in crumbled feta.

Distribute spinach mixture evenly over chicken in baking dish. Bake for 35-40 minutes, until chicken is cooked through.
