Faux French Toast

Miniature snacks - good hot or cold, great for snacks


    6 egg

    2 tbsp. homemade coconut milk

    1 med. red apple

    2 oz. pork sausage

    1 tsp. cinnamon

    0 tsp. ground ginger

    0 tsp. nutmeg

    1 tbsp. maple syrup


Grease muffin tins (12) with coconut oil. Preheat oven 375°F. Fill muffin holes with cut up apple pieces, cut up sausage, and spices (I use cinnamon, ginger, nutmeg and cloves to taste), and a tiny bit of maple syrup. Beat 6 eggs and 2 tablespoons of coconut milk together and pour evenly into the muffin holes. Bake for about 20 mins till fluffy and light brown. NOTE: you can fill the holes with any combination you like - ham and cheese, veggies - to make any breakfast/snack combo you can think of and that goes with the eggs.
