Seasoned Chicken wrapped in Romaine lettuce
1 avocado
1/2 c. brown rice
1 chicken breast, skin-on
2 tsp. sea salt
2 tsp. ground cumin
2 tsp. black pepper
2 clove garlic
4 tbsp. lime juice
1 sml. yellow bell pepper
1/2 sml. onion
2 spg. cilantro, bunch, fresh, organic
1 tbsp. extra virgin olive oil
Cut onions and peppers in strips, set aside. Mix all spices and lime juice together in med. bowl Cut chicken in strips and place in bowl of mixed spices until all are coated. Pour Olive Oil in pan and cook chicken until almost done then add the onions and pepper and cover for 5 min then cook until chicken is done. Serve wrapped up on a Romaine Lettuce leaf. * (optional) dice avocado and pour a tblsp of lime juice over along with cut fresh cilantro leaves. Serve on top of chicken in lettuce wrap. Eat with or without 1 serving of brown rice if you need or don't need a carb.
