TF All organic, easy and sooo healthy traditional hummus
2 c. cooked chickpeas
3 lemon
1 tbsp. paprika
2 garlic
1/2 tsp. ground cumin
1 pinch sea salt
1 black pepper
Soak the raw chick peas for at least 24 hours. Rinse and change water a couple of times. Bring a large pot of water to a boil. Remove from heat add the chick peas and let stand for 1 minute. Drain. If you do not do this step, the hummus will be awful. Now, with fresh water boil the chick peas, and the garlic cloves for about 30 minutes or until they are soft. Drain the water out and rinse the chick peas very well with hot water, twice. The hard part is over. Now add all the ingredients together and blend. Depending on how you are going to serve, you may want different consistencies...so you can add some hot water or more lemon juice as you blend. It is now ready to serve when cooled. To make different flavours, you can add chilli, olives, red peppers etc to the recipe. I do not add any oils, but may add a little olive oil to the serving at the time. It tastes great and very fresh, as a dip, or part of salad. Also, it freezes very well and even after thawing, lasts weeks in the fridge. enjoy.
