End of Summer Veggie Stew/Chili

This recipe uses all of the end of the summer veggies that are pouring out of your garden. It is a stew & chili all together.

Ingredients

    1 jalapeno pepper

    sea salt & black pepper to taste

    2 tbsp. chili powder

    1 tbsp. paprika

    28 oz. fire-roasted diced tomatoes with green chilies

    2 tbsp. fresh thyme

    1 lime

    4 green onion

    1 c. cheese, any type

    3 corn on the cob, fresh, organic

    12 fl oz. beer

    2 tbsp. butter

    1 lbs. ground turkey

    1 lrg. onion

    3 garlic

    1 zucchini

    1 med. green bell pepper

In a large, heavy pot, heat butter in pan and add the ground meat of choice. Brown on medium high for about 8 minutes, stirring occasionally. Stir in onion, garlic, zucchini, bell pepper and jalapeƱos and season with salt and pepper. Stir in corn kernels, chili powder and paprika. Cook until the veggies are softened, about 7 minutes. Stir in beer or stock and cook until reduced slightly, about 3 minutes. Stir in the tomatoes, thyme and lime peel and cook for another 10 minutes. Turn off heat and stir in lime juice. Top with raw cheese and the scallions.
