This spicy chicken dish is reminiscent of chicken mole. I wanted something very spicy and different.
2 tbsp. chili powder
4 tbsp. cacao powder
4 chicken breast
1 tbsp. coconut oil
sea salt to taste
1 tsp. black pepper
2 tbsp. paprika
Cut up the chicken breast into 1 inch strips. Melt the coconut oil slowly in a frying pan so the oil is about 1/2 inch in the pan (so you may need more coconut oil). Add the chicken; sprinkle salt and pepper on it while you cook it on all sides without burning. Add half of the paprika and chili powder and turn the pieces. Add the other half of the spices. (If you need more coconut oil, add another tablespoon.) Stir the chicken so the spices are distributed into the oil and on the chicken. Sprinkle the cacao powder on all sides of the chicken (if you can see the chicken, sprinkle more chocolate). Stir the chicken so the spices and chocolate are blended in the oil. Cover and cook for at least 45 minutes on low heat. Stir frequently to avoid burning.
