A Lebanese twist for vegetarian protein types - of course it is good for other types as well!
1 med. onion
3 tsp. coconut oil
4 c. fava beans
1/4 c. water
1/2 tsp. ground cumin
1 tsp. sea salt
1/4 tsp. black pepper
4 egg
Melt coconut oil in a skillet and sauté onions until limp. Add beans and stir; fry for 2 minutes on medium heat. Add water and cover with a lid. Cook over medium heat until water has almost evaporated. Add seasonings. Break eggs and add to bean mixture, stirring slightly to break the yokes. Cook only until eggs are set.
