Delicious breakfast with no toast!
1/2 c. white mushrooms
1/4 c. onion
1/4 c. green bell pepper
1 oz. mild cheddar cheese
1 tsp. extra virgin olive oil
3 egg
1 c. brown rice
Heat skillet and add Evoo to pan then add all veggies, next add brown rice cook a little more and finally add eggs. Season with sea salt and ground black pepper. Remove from heat and sprinkle organic cheese. TASTES FABULOUS!!
