Egg and Sausage Bake

Eggs, sausage, and veggies combine for a delicious and nutritious breakfast (or lunch)!


    1/2 lbs. ground sausage

    1 clove garlic

    1/2 c. onion

    1/2 c. green bell pepper

    1/2 c. red bell pepper

    1/2 c. diced tomatoes, fresh

    6 egg

    1/2 c. almond milk

    1/2 tsp. dried parsley

    1/2 tsp. dried basil

    1/2 tsp. sea salt

    1/2 tsp. black pepper


Preheat oven to 375ºF. Grease an 8x8 baking dish.

Brown the sausage in a skillet over medium to medium-high heat with garlic and onion. Remove skillet from heat, and stir in diced peppers and tomatoes. Move mixture to baking dish.

Whisk eggs with almond milk, basil, parsley, salt, and pepper in a bowl. Pour mixture over mixture in baking dish. Bake for about 30 minutes, until egg is just set and edges are slightly browned.

Remove from oven and let cool for 10 minutes before cutting.
