This is a super quick and easy breakfast!
1 tbsp. coconut oil
1 c. frozen baby peas
2 egg
Melt coconut oil in a small frying pan.
Add the peas (I use frozen ones) and stir to coat in oil. Move the peas around a bit so they defrost evenly.
When the peas are just about done, break 2 eggs into the pan and stir everything together.
Move the mixture around gently while the eggs cook. Season with sea salt and pepper if desired.
I feel full and completely satisfied after this breakfast!
You could very easily use only ½ cup of peas and serve the scramble on a piece of toast - the carb count would be the same.
