These are great for breakfast and you can spice them up by using a hotter pepper.
4 poblano pepper
6 egg
4 slc. turkey bacon
1/2 c. cottage cheese
1 pinch mild cheddar cheese
1/2 c. onion
1/2 c. tomato
2 clove garlic
1 cilantro, bunch, fresh, organic
Cut tops off of pablano peppers and clean out seeds. Then steam peppers until slightly softened. While peppers are steaming dice onions, bacon, and garlic and saute over the stove until bacon is cooked. Add eggs and cheddar cheese to the bacon mix and cook thoroughly then set aside. Spread cottage cheese evenly onto 4 separate plates, stuff peppers with egg and bacon mixture, add diced tomatoes and then place peppers on each plate of cottage cheese. Dress with cilantro and your favorite hot sauce as desired.
