Easy Spelt Pancakes or Waffles

These are easy to mix up and very tasty! Even my kids will eat them. We like to serve them with sliced bananas, nitrate-free sausages, and chopped pecans on top with just a teeny drizzle of organic pure maple syrup.

Ingredients

    1 1/3 c. spelt flour

    2 tsp. baking powder

    1/4 tsp. sea salt

    1/2 tsp. cinnamon

    1 egg

    1 c. milk, raw or organic

    2 tbsp. coconut oil

    1 tbsp. honey, raw

Directions

In a medium size mixing bowl, combine flour, baking powder, salt, and cinnamon. In smaller bowl, beat egg, add milk, honey, and heated coconut oil (to liquefy it - just add it with other liquids so the heat doesn't "cook" the egg). Gently whisk contents of smaller bowl into dry ingredients just till ingredients are blended together. Do not use mixer and do not over mix.

*Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown or according to your personal preference.

(For Waffles: Bake in a preheated waffle iron according to manufacturer’s directions until golden brown.)
