Easy Peasy Omelette

This omlette was made by mistake but turned out great!! And I eat it at least 2-3 times each week. I absolutely love it!!


    1 coconut oil

    1 sea salt & black pepper

    2 egg

    1/3 c. white onion

    1/3 c. bell pepper, any color


  1. In a large cup, combine eggs, pepper, salt and pepper, and mix well.
  2. In a skillet heat coconut oil, I LOVE coconut oil, I just love the extra taste it gives this omlette. When the oil is hot pour cup mixture into skillet and let fry until sides are crisp.
  3. Place on plate and enjoy!
  4. Sometiimes, not always, but sometiems I top the omlette after its done with some organic grated cheese. But it tastes great either way.
