Easy Lemon Chicken

Tasty, easy chicken that you make on the cooktop


    1 lbs. chicken thighs or breast

    1/2 med. onion

    1 lemon

    1 tbsp. avocado oil

    sea salt to taste

    black pepper to taste


Use a skillet that has a cover. Heat the oil in the skillet and saute the sliced onion until browned.

Lay the chicken on top of the cooked onion in the hot pan in one layer. Slice the lemon very thin and remove the seeds. Press the lemon slices into the top of the chicken (be sure to cover the surface.) Sprinkle with salt and pepper. Brown the chicken on one side. Then use a spatula to flip the chicken and lemon slices over. Cover the skillet and cook on medium low until cooked through. Serve the chicken with the lemon and onion mixture on top.

Notes: the cooking time will depend upon the thickness of the chicken. You can dress the recipe up with minced garlic sauteed with the onion, and/or fresh herbs such as dill, thyme, rosemary put on top of the chicken while it cooks.
