This twist on your usual eggs and bacon creates delicious individual breakfast or brunch quiches for your lucky guests.
8 turkey bacon
4 egg
2 egg white
3 tbsp. Greek yogurt
2 tbsp. fresh chives
1/4 tsp. sea salt
1/8 tsp. black pepper
Preheat oven to 400°F (200°C). Spray 12-cup muffin tin with cooking spray. Press two halves of turkey bacon into each of 8 muffin cups, covering bottom and sides as much as possible. Bake in centre of oven for 6 to 8 minutes or until bacon is browned at edges and set. Cool. In bowl, whisk eggs with egg whites until smooth. Whisk in yogurt, chives, salt and pepper. Divide mixture evenly among turkey-lined cups. Bake in centre of oven for 10 to 12 minutes or until cooked through. Use spoon to unmold.
got this recipe from presidentschoice.ca It lists that there is actually 10g of protein per serving not just 8 but that is the highest number I could chose.
