Easy Egg wraps

These are great if you don't have any SWG bread/wraps :) Use any protein for filling..try Bacon in a BLT egg wrap, a small can of tuna, sliced ham/roast meats or chicken and avocado (add 1 serve of fat) just check your serving sizes. 1 carb is approx 1 cup mixed veg. (use grated carrot, red onion,mushrooms etc). I dont use that much and just have some fruit after or serve with a side salad ;)


    2 egg

    1/2 c. lettuce

    1/2 lrg. tomato

    1/4 c. cucumber

    3 oz. canned chicken

    sea salt & black pepper to taste


Heat a non-stick pan over med-low heat. Pour in 1 beaten egg, swirling to evenly coat base of frypan. Cook without stirring until set (should be starting to lift at edge or easily lifted with spatula) Remove from pan, lay on plate. Repeat with second beaten egg. Divide filling ingredients between egg wraps, leaving bottom third unfilled. Fold in one side, then bottom, then other side to enclose filling (like a burrito) Enjoy :)

I am thinking the egg wraps could double as many wheat products....burritos maybe? Or lasagna sheets? They are a little more fragile but are still able to be eaten by hand (with only a little dribble of tomato juice here and there)

NOTE The chicken used in the picture is what I still had in the pantry (chick & mayo). This is not recommended but you can use shredded chicken instead :)
