Easy Cajun Chicken

This recipe is really easy to make, but packs a ton of flavor!


    1 lrg. onion

    1 lrg. green bell pepper

    1 lbs. chicken breast

    2 tbsp. seasoning, cajun, organic

    cayenne pepper to taste

    1 tbsp. garlic

    1 c. chicken broth

    1 tbsp. coconut oil


Heat coconut oil in a dutch oven or deep skillet over medium to medium-high heat. Add chopped onions and chopped green peppers, and fry for about 5 minutes - they will still be slightly crispy. Remove onions and peppers, and set aside. Add chicken (cut into chunks) to the skillet and cook until slightly done. Sprinkle Cajun seasoning all over chicken, stir it all up, and cook a few more minutes. Add onions and peppers back to the pot. Add chicken broth, chopped garlic, and cayenne (if using). Bring to a boil, stirring constantly, reduce heat to low, cover, and let simmer for 45 minutes.

Serve in a bowl over quinoa or brown rice (be sure to pour some of the liquid over the quinoa/rice). Add a spoonful of Greek yogurt or sour cream if you like. C'est bon!
