Quick, easy and delicious Black Bean Soup... easily adjusted for your own personal tastes.
19 oz. canned black beans
1 1/2 c. chicken broth
1/2 sml. onion
3/4 c. roma tomatoes
Combine all ingredients except lime juice, cheese and green onions in saucepan and heat thoroughly.
Spoon into 4 bowls. Add lime juice.
Combine shredded cheese and green onions. Sprinkle on top of each serving.
Each serving contains about 1.5 carbs. Vegetarians can count this as 1 carb and 1 protein.
