A creamy dressing to replace mayo or ranch dressing. Can be put on rice, pasta, quinoa, anything! Full of good fats and protein :)
1/2 avocado
1 garlic
1/8 lemon juice
1 tbsp. almond butter
sea salt & black pepper to taste
2 tbsp. extra virgin olive oil
Chop up the avocado and put in a bowl. Add the almond butter, garlic, lemon, salt, and pepper. Add as much olive oil as you would like to thin it out, I added a couple of tablespoons to make it a thick creamy consistency. Whiz with a hand blender until smooth. I served this with quinoa and grilled veggies, but it can add creaminess to any savory dish! Oil could be replaced with flax to add a real omega boost. Or any other seasoning to this base, like chilli, fresh herbs, etc. Enjoy!
