Oatmeal cookies Ireland style!


    2 c. oats, whole, dry, organic

    2 tbsp. butter

    1 c. water


Boil the water. Place oatmeal in bowl. Put butter (salt optional) in a jug and add boiling water. Once butter is dissolved add to oatmeal and mix into a dough.

Leave to set until dry enough to press out into a sheet (may take several hours or overnight). Press out in a 10X8 pan (may be difficult to work the dough). Cut into cookies.

Allow to set for an hour. Place pan into a low heat oven (150°F) for 3-4 hours.
