A scrumptious and easy chicken dish
1/4 c. extra virgin olive oil
1/4 c. dijon mustard
1/4 c. lemon juice
1 sml. orange zest
1 tbsp. garlic
sea salt & black pepper to taste
4 chicken breast
1/2 c. balsamic vinegar
Mix the vinegar, olive oil, dijon mustard, lemon juice, orange zest, and garlic in a bowl. Salt & pepper chicken to taste and place in an oven safe dish. Pour mixture over chicken and bake at 350 for 45 minutes. I usually cover the dish with tin foil for the first 15 minutes and then cook uncovered for the next 30 minutes.
Also makes your kitchen smell divine! If your breasts or thighs are thin, cut cooking time to 30 minutes!
