Delicious red lentil soup that is very filling and comforting ! adjust quantities to taste as I never use measuring cups :)
2 c. water
sea salt & black pepper to taste
1/2 tbsp. ground cumin
1 tsp. ground coriander
1 lemon
6 c. chicken stock
8 c. water
1 whole chicken breast, skin-on
1 lrg. onion
1 coriander seed
1) Peel and quarter the onion, place in deep cooking pan or pressure cooker with all other stock ingredients but the chicken, bring to a boil. 2) Carefully lower the chicken into the boiling mix and let simmer for 40 minutes (if using pressure cooker, put all ingredients including chicken, seal the lid, cook on high till pressure builds, then reduce to low and let cook for 20 minutes) 3) Filter out chicken stock using a sieve, shred chicken pieces and add later to finished soup if desired, otherwise, use in other dishes or make lunch sandwiches for the next day 4) Bring the chicken stock to boil, and add in the red lentils. Let simmer on low for 20 minutes or more. Do not place a lid or the lentils will develop a foam and might spill. If soup thickens too much, add water. 5) Use an immersion blender to blend the cooked lentils to a smooth soup. It should be thick and creamy. Taste before adding more S&P as the amount used in the stock might be enough. 6) Add the cumin (essential), and the coriander and stir. 7) splash some lemon juice on top and serve piping hot. Lentils are extremely filling and nutritious superfoods !
