This delicious Pumpkin Cheesecake contains no grains, no gluten, and no refined sugar.
1/2 c. walnuts
1/2 c. almonds
5 date
1 dsh. sea salt
2 c. pumpkin puree, canned
1 c. Greek yogurt
1/4 c. honey, raw
1 tbsp. lemon juice
1 tbsp. cinnamon
1/4 tsp. sea salt
Preheat oven to 350°F.
Combine walnuts, almonds, dates, and a dash of sea salt in a food processor. Process until crumbly and sticky. Press mixture into the bottom and sides of a pie pan.
Combine pumpkin, Greek yogurt, honey, lemon juice, cinnamon, and 1/4 teaspoon sea salt in a food processor. Process until smooth, and pour into crust. Bake for 50 to 55 minutes until no longer jiggly. Let cool before serving. Enjoy!
