Mix coconut oil, unsweetened cocoa, raw honey, finely shredded coconut and coconut milk, form into 1/2" balls, roll in coconut. (You can substitute finely chopped raw nuts if you prefer, and add a tiny bit of vanilla or almond extract.)
4 tbsp. coconut oil
4 tbsp. honey, raw
4 tbsp. cacao powder
4 tbsp. shredded coconut
1 tbsp. canned coconut milk
This has a lovely dark chocolate flavor. Mix the oil, cocoa powder, honey and finely shredded raw coconut together well in a small bowl, adding a bit of milk if you need to. You can add almond extract here if you wish. With clean hands scoop up a teaspoon of mixture, form into a ball, then roll in coconut. This should make about 12 truffles. Refrigerate, but let come to room temperature prior to eating for the best flavor.
