Curried Split Pea Soup

My daughter-in-law introduced me to Curried Split Pea Soup and I have loved eating it over the past several years. The sweet potato adds a savory sweetness to the soup. The serving size is 2 cups and yields approximately 150 calories.

Ingredients

    2 tsp. curry powder

    2 tbsp. fresh ginger

    1 tsp. ground cumin

    1/4 tsp. ground coriander

    1/4 tsp. cardamom

    1/4 tsp. cinnamon

    1 tsp. sea salt

    8 c. water

    1 sweet potato

    1 lbs. split peas

    1 tbsp. extra virgin olive oil

    3 clove garlic

    1 med. onion

Directions

1 . Saute' the onions in olive oil at medium heat for about 5 minutes. Add garlic, ginger and spices. Saute' 2 more minutes

  1. Add the water and stir well. Add the split peas and sweet potato. Cover and bring to a boil.

  2. Bring heat back down to medium; let soup simmer for about an hour, until peas are tender. Grate in the carrot (if using) and serve. Garnish with fresh cilantro if you choose.

Note: I personally add a dash of Liquid Smoke for an essence of smoke.
