Curried Ground Pork w/ Sweet Potatoes

A delicious, easy low-fat dish that incorporates Indian spices and sweet potatoes for a delicious and nutritious meal!
Ingredients
1/2 c. water
sea salt to taste
1 tbsp. curry powder
1 tsp. turmeric
1 tsp. ground cumin
1 tsp. ground coriander
2 lrg. white or gold potatoes
4 plum tomatoes
1 c. frozen baby peas
1/2 c. cilantro, bunch, fresh, organic
3 tbsp. extra virgin olive oil
1 lbs. ground pork
1 onion
2 garlic
2 red chili pepper
1 fresh ginger
Directions
- Heat olive oil on med/high heat in large pot with a lid. When oil is hot, add ground meat, spreading it out over pan. Try not to overcrowd the meat (you may need to cook in batches). Cook meat without stirring until it begins to brown.
- Add chopped onion and chilis. Stir and saute 4-5 minutes or until onion begins to color a bit. Sprinkle salt over everything.
- Add ginger & garlic. Mix well and saute 1-2 minutes more.
- Mix in spices, water, potatoes. Stir to combine & cover. Turn heat down to med/low and simmer 15-20 minutes until potatoes are tender.
- When potatoes are tender, add tomatoes and peas. Mix well, cook 2-3 minutes covered. Add salt if necessary.
- Add chopped garnish just before serving.
