This is protein to the max!! This recipe uses greek yogurt instead of mayo!
2 tbsp. golden raisins
2 tbsp. butter
1/2 lbs. chicken thighs or breast
1/4 c. Greek yogurt
1/2 tsp. lemon juice
1 tsp. curry powder
1/8 tsp. turmeric
sea salt & black pepper to taste
1 stlk. celery
1 green onion
2 tbsp. walnuts
Heat butter in a pan over medium heat. Add chicken pieces and sauté until browned and cooked through. Set aside.
In a medium bowl, combine Greek yogurt, lemon juice, curry powder, turmeric, sea salt, and pepper. Stir until fully incorporated. Add sliced celery, diced onion, chopped walnuts, and golden raisins; stir to mix well. Add cooked chicken pieces and stir to evenly coat.
This dish can be enjoyed warm or cold. Enjoy as is or serve over a bed of your favorite greens.
