Cucumber, Tomato, and Avocado Salad

Healthy fats and carbs combine to make a tasty, filling salad.


    1 med. tomato

    1 cucumber

    1/4 sml. red onion

    1/2 med. avocado

    2 tsp. extra virgin olive oil

    1 1/2 tsp. lemon juice

    sea salt & black pepper to taste


Combine chopped tomatoes, cucumber slices, sliced onion, and diced avocado in a bowl. Drizzle with olive oil and lemon juice; toss gently to combine. Season with sea salt and pepper.
