Great way to use up leftover chicken!
2 tbsp. fresh parsley
2 tbsp. lemon juice
1 tbsp. honey, raw
1 tbsp. dijon mustard
1/4 tsp. sea salt
1/4 c. homemade mayonnaise
black pepper to taste
1 c. cooked chicken
2 stlk. celery
2 med. Granny Smith apple
1/2 c. chopped nuts
1/4 c. sour cream, organic
In a large bowl, combine the chicken (cooked and cubed), celery (chopped), apples (cored and cubed), and chopped nuts of your choice (I like walnuts). Prepare the dressing in a small bowl by whisking together the sour cream, mayonnaise, chopped parsley, lemon juice, honey, Dijon mustard, sea salt, and pepper. Pour over the chicken mixture and toss to coat. Refrigerate until well chilled. Serve on a lettuce leaf, shredded lettuce, or an Ezekiel wrap.
