Crockpot Chicken with Butternut Squash

Chicken + butternut squash + crockpot = delicious fall dinner!


    1 tbsp. coconut oil

    1/4 med. onion

    1 clove garlic

    1/2 lbs. chicken breast

    2 c. butternut squash

    1/4 c. chicken broth

    1 tsp. fresh rosemary

    1 tsp. fresh sage

    sea salt & black pepper to taste


Heat coconut oil in a pan over medium heat. Add diced onion and sauté for about 5 minutes.

Add minced garlic and cook for another minute, until fragrant.

Add cubed chicken and cook until brown on each side but not cooked all the way through.

Move chicken, onions, and garlic to a crockpot. Add butternut squash, chicken broth, rosemary, sage, sea salt. and pepper to the crockpot. Cook on low for 6 hours.
