Crockpot Beef and Veggie Chili

It's hard to beat the smell of chili cooking in a crockpot!


    1 1/2 tbsp. chili powder

    1/2 tbsp. dried oregano

    1 tsp. ground cumin

    1/2 tsp. sea salt

    1/2 tsp. black pepper

    1/4 tsp. cayenne pepper

    1 lbs. ground beef

    1 tbsp. coconut oil

    1/2 med. onion

    2 clove garlic

    1 med. bell pepper, any color

    2 med. carrot

    2 stlk. celery

    28 oz. diced tomatoes, canned


Heat coconut oil in a skillet over medium heat. Add minced garlic and diced onions, and sauté until fragrant. Add ground beef to the skillet, and cook, breaking beef up, until browned. Move ground beef mixture to crockpot. Add remaining vegetables (diced bell pepper, diced carrots, diced celery, diced tomatoes) and all spices to crockpot. Stir it all up, and cook on low for about 6 hours.
