Beef and bell peppers are a match made in crockpot heaven!
1 lbs. ground beef
1 c. bell pepper, any color
1/4 med. onion
1/2 c. beef broth
1 tbsp. arrowroot powder
1/4 c. water
1 tsp. garlic powder
2 tbsp. fresh parsley
1 tsp. sea salt
1/2 tsp. black pepper
Place meat on bottom of crockpot. Top with sliced onion and chopped bell pepper. Sprinkle with salt, pepper, and garlic powder. Pour beef broth over everything. Cook on high for 3 ½ to 4 hours.
After 3 ½ hours of cooking, whisk together arrowroot powder and water. Add ½ cup of liquid from the beef and bell pepper mixture in the crockpot, and cook on medium heat until boiling. Continue to cook for 2 minutes past the boil before adding the mixture back to the crockpot. Sprinkle with chopped parsley, stir, and serve.
Serve over quinoa, rice, or pasta.
