A touch of pumpkin makes the chili taste like fall!
sea salt & black pepper to taste
1 tbsp. coconut oil
2 lbs. ground turkey
1 sml. onion
3 garlic
1 tsp. chili powder
2 bay leaf
2 tsp. ground cumin
1 tsp. oregano, ground, organic
15 oz. pumpkin puree, canned
4 oz. canned diced green chilies
30 oz. great northern beans
2 c. chicken broth
Heat coconut oil in large skillet over medium-high heat. Add turkey and cook, breaking it up until cooked through, about 5 minutes. Drain and add to crock pot.
Add a bit more oil and saute onion (chopped) and garlic (minced) until soft. Add cumin and saute another minute. Add to crock pot.
Add beans (drained and rinsed), pumpkin puree, green chilies (chopped), broth, chili powder, oregano, bay leaves, salt, and pepper. Mix well. Cover and cook on high for 4 hours or low for 6-8 hours.
Remove bay leaves and adjust seasoning to taste.
