You only need 3 ingredients for this dish that can be eaten a variety of ways!
2 lbs. chicken thighs or breast
Italian seasoning to taste
2 c. hot pepper relish
*The hot pepper relish can be a 12 ounce jar of peppercini's (pepper rings). Arrange chicken in crock pot. Pour the entire jar of pepper rings over the chicken (juice and all). Sprinkle a generous amount of Italian seasoning over everything. Put the lid on the crock pot and cook on low for about 8 hours or high for about 4 hours. Once the chicken is cooked, use 2 forks to shred the chicken in the crock pot. Let the mixture sit in the crock pot on low to soak up some of the liquid left in the pot.
Serve on top of a salad, over quinoa, on sprouted whole grain bread, or just as is (spoon some into a bowl and enjoy!).
