A crisp spice cookie... perfect for the holidays!
1/2 c. butter
3/4 c. coconut sugar
1 egg
1 c. spelt flour
1 c. almond flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. sea salt
2 tbsp. coconut sugar
2 tsp. cinnamon
Preheat oven to 375ºF. Line 2 baking sheets with parchment paper.
Cream the softened butter and 3/4 cup coconut sugar together. Add the egg and beat until fluffy.
In a separate bowl stir together the flours, baking powder, baking soda, nutmeg, and salt.
Blend the dry ingredients into the creamed mixture to make dough. Add a bit more flour if necessary to make the dough stiff enough to form into balls.
Mix the remaining coconut sugar and cinnamon together in a small bowl.
Shape the dough into balls about the size of un-shelled walnuts. Roll the cookie balls in the cinnamon sugar mixture and place 18 balls on each cookie sheet. Flatten with a fork.
Bake for 10 - 12 minutes or until very lightly browned around the edges. Remove to cooling rack, cool and enjoy! Makes about 3 dozen cookies, 3 cookies= 1 serving.
