4 c. pumpkin
1 tsp. coconut oil
1/2 c. kale
1 c. almond flour
1 tbsp. chia seeds
1 tbsp. sesame seeds
sea salt & black pepper to taste
1/2 tsp. ground cumin
1 tsp. turmeric
Preheat oven to 400ºF.
Dice pumpkin flesh, arrange in a baking dish, and bake for 45-60 minutes, until tender.
Allow pumpkin to cool before transferring to a food processor. Blend until smooth.
Mix in almond meal, chia seeds, and sesame seeds. Add cumin, turmeric, sea salt, and pepper.
Heat coconut oil in a large pan, and cook kale (torn into bite-sized pieces) until crispy, about 5 minutes.
Cradle a tablespoon sized amount of pumpkin mix in your palm, then press in a few pieces of kale. Use a little bit more of the mixture to cover the kale. Repeat until done, making 8 total croquettes, and place the croquettes in a baking dish. Bake croquettes for 15 minutes, until firm.
Serve with green salad. Enjoy!
