These crunchy garbanzos satisfy my cravings for french fries with none of the guilt!
15 1/2 oz. cooked chickpeas
smoked paprika to taste
2 tsp. coconut oil
sea salt & black pepper to taste
Heat coconut oil in a frying pan until melted and hot (about 1 minute on medium heat).
While the coconut oil is heating, season the garbanzo beans with the smoked paprika, sea salt, and pepper to taste. Mix well so that all the garbanzos are well coated.
Add the garbanzos to the hot pan and cook in the coconut oil until crunchy, approximately 15 minutes. Make sure to stir occasionally so that they do not burn or stick (and feel free to lower the heat a little if they start to burn).
These are great as a side dish, snack, salad topping... the possibilities are endless!
