Crispy Cucumbers in Italian Vinegar

A delightful BD-friendly rendition of a family favorite.

Ingredients

    4 c. cucumber

    1 tbsp. sea salt

    2 c. apple cider vinegar

    1/2 tsp. black pepper

    1 tbsp. Italian seasoning

    stevia to taste

Directions

I have a rectangular, glass covered dish handed down by my mother-in-law that she put her cucumbers in using this same recipe. The cover keeps the cucumbers submerged in the vinegar, but you can do that by weighting them with a bowl in a bowl.

I simply mix the salt, pepper, vinegar, stevia, and Italian seasoning together until the stevia and salt are dissolved. Pour it over the sliced cucumber. I like to refrigerate them for about 30 minutes to an hour, but sometimes my family eats them before they have had the chance to get cold. Feel free to play with the sweet/sour combination to get the right balance. Some vinegar just does not seem as sour as others and the sweetness needs to be balanced with the sour.
