Catfish, crispy on the outside with the use of egg and spelt flour instead of cornmeal.
10 oz. catfish
4 tsp. butter
1 spelt flour
1 sea salt
1 white pepper
1 egg
You need: *2 soup bowls with flat bottom. *Skillet with lid. *Turner.
Rinse the catfish filets and dry them off. Place spelt flour (1/4 C or something, not everything will be used), salt, and white pepper into a soup bowl. Place an egg and beat it into another soup bowl. Add butter to a skillet and turn on the heat.
Put catfish into the bowl with the beaten egg and immerse it. Move the fish into the spelt bowl and coat it with flour. Put the coated catfish into the heated skillet and fry it for 4 minutes. Use lid in the beginning. Turn the catfish over in the skillet and fry it on the other side for 3-4 minutes. Use lid in the beginning.
COMMENT: I love catfish, but Cornmeal is really bad for us. It has a sky high inflammation factor and lots of nasty carbs, so we should stay away from it. But spelt flour and egg works wonderfully to create the crisp coating.
