The perfect pumpkin waffles! Light, fluffy, and just enough crisp.
1/2 tsp. ground ginger
1/4 tsp. nutmeg
1/4 tsp. ground allspice
1 egg
1/2 c. canned coconut milk
1/2 c. pumpkin puree, canned
1 tbsp. coconut oil
3/4 c. oat flour
1 tsp. baking powder
1 tbsp. coconut sugar
1 tsp. cinnamon
Preheat open waffle iron to medium-high heat.
Mix oat flour, baking powder, coconut sugar, cinnamon, ginger, nutmeg, and allspice in a medium bowl. Whisk together egg, coconut milk, pumpkin puree, and melted coconut oil in a separate medium bowl. Add wet ingredients to dry ingredients, and mix well. If mixture is too thick, add one tablespoon of coconut milk at a time until it reaches desired consistency.
Pour batter evenly onto waffle iron. Cook for 5-8 minutes, depending on waffle machine and how crispy you like your waffles. Serve with raw honey, fresh berries, maple syrup, or coconut butter. Enjoy!
