This is a super yummy, simple, creamy tomato sauce. Serve it over pasta or with sprouted grain bread.
1 tbsp. coconut oil
2 clove garlic
1 med. red bell pepper
1 lbs. chicken sausage
1/2 tsp. dried oregano
1/2 tsp. Italian seasoning
cayenne pepper to taste
1 lbs. brown rice pasta
1 med. onion
15 oz. tomato sauce
14 oz. diced tomatoes, canned
2 oz. Greek yogurt
1 tbsp. cashew butter
Heat oil in a pan over medium-high heat. Add finely chopped garlic, chopped onion, oregano, Italian seasoning, and cayenne. Saute until onion and garlic start to brown. Add sliced chicken sausage, and cook until browned. Add julienned red pepper, diced tomatoes, and tomato sauce. Simmer on low until sauce is heated through. Add cashew butter and Greek yogurt. Heat through on low until the mixture thickens a bit.
Cook the pasta according to the instructions on the box. Serving size is 1/2 cup noodles with 1 cup sauce.
