Creamy Rice Pudding

Creamy and sweet rice pudding. Hubby and Kid tested many times!


    1 c. long grain wild rice

    1 lrg. egg

    1/2 c. canned coconut milk

    1/8 tsp. sea salt

    1/4 tsp. lemon extract

    1/2 tsp. vanilla extract

    2 1/2 tbsp. honey, raw


Cook your rice according to package instructions.

Fold beaten egg and milk into cooked rice. Add sea salt, lemon extract, vanilla extract and raw honey (you may need to warm up honey a bit first). Lightly grease a small casserole pan. Pour in the mixture and bake in a 375 degree F oven for 20 minutes. You may add more honey if you desire more sweetness

I often add 2 or 3 Tablespoons of raisins to this recipe and most times sprinkle a bit of nutmeg over the top. You could add nuts if you wish. Play with the different sweeteners to see which one you like best with this.
