Tastes great warm or cold -- just like apple pie!
1/4 c. orange juice
2 tsp. vanilla extract
2 tsp. cinnamon
1/4 c. Greek yogurt
10 med. red apple
In a large sauce pot, combine the apples (peeled, cored, and quartered), orange juice, vanilla, and cinnamon. Cover and simmer about 30 minutes until apples are tender, stir occasionally.
Mash apples using a masher, I prefer to leave them slightly chunky. Top each serving with a heaping teaspoon of Greek yogurt.
