Cranberry Pear Muffins

Delicious combination of fall flavors in these gluten-free muffins!


    3/4 c. pear

    1/4 c. dried cranberries

    2 c. almond flour

    1/2 tsp. baking powder

    1/4 tsp. sea salt

    1 tsp. cinnamon

    3 egg

    1/4 c. honey, raw

    2 tbsp. coconut oil


Preheat oven to 325ºF. Line 9 cups of a muffin pan with paper liners.

Combine almond flour, baking powder, sea salt, and cinnamon in a bowl.

In a separate bowl, whisk together eggs, honey, and melted coconut oil.

Add dry ingredients to wet ingredients, and whisk together until fully incorporated.

Peel and finely dice pears. Stir in diced pears and dried cranberries.

Divide batter among the 9 lined muffin cups. Bake for 22-25 minutes.
