What to do with leftover cranberry sauce? I experimented with a bread recipe and used my extra can of organic whole cranberries - the outcome was delicious!!!
3 egg
1 tbsp. vanilla extract
1/4 c. honey, raw
1/4 c. coconut oil
2 1/4 c. almond flour
1/2 tsp. sea salt
1/2 c. pecans
1 tsp. baking soda
1 tbsp. orange zest
2 c. cranberry sauce
Preheat oven to 350ºF. Grease a 5x9-inch loaf pan with butter or coconut oil.
In a blender combine eggs, vanilla, honey, and coconut oil. Stir in the organic whole berry cranberry sauce. Add the almond flour, salt, baking soda, orange zest, and chopped pecans; mix well.
Pour batter (will be thin) in the well-greased loaf pan and bake 50-60 minutes. Cool on rack and ENJOY!!!
